Fresh & Easy Tortilla Soup in the Vitamix

xtortillasoup,P20mainjpg.jpg.pagespeed.ic.e3NTPfWyvw Ok you’ve probably heard us¬†say more than once or twice that we love our Vitamix! One of the reasons why is that we can take produce we don’t know what to do with, make a great tasting soup in a few minutes, and have very little clean up.

For those of you wanting to eat cleaner, this is a great way to do that, get plenty of veggies, and have a tasty meal. This recipe yields about 5-6 cups, depending on how much extra you add ūüôā

Soup Base

  • 3 cups vegetable (or chicken or beef) broth
  • 1-2 tomatoes, halved (or even 1/4-1/2 cup tomato sauce if that’s all you have)
  • 1 carrot, halved
  • 1 stalk celery, haved
  • 1 slice onion
  • 1 clove garlic, peeled
  • 1 slice/piece (or more) red pepper, cabbage, squash/zucchini, cauliflower, mushroom, etc.
  • salt and pepper to taste
  • 1 + tsp taco seasoning
  • dash cumin

Optional Ingredients

  • 1/2 – 1 cup cooked chicken breast, chopped
  • 1/2 fresh jalepeno
  • 1/4-1/2 cup corn (cooked or canned and drained)
  • 1/4 – 1/2 cup black beans¬†(cooked or canned and drained)
  • 2-4 ounces tortilla chips
  • shredded cheddar cheese
  • chopped cilantro

The thing about this recipe is that you can use up a little bit of this and that in your soup. The last time I made this I didn’t have red pepper or cabbage and I don’t like mushrooms. I added cauliflower because I had it, and I think a leaf of kale because what the heck! Use green onions instead of regular. A yellow pepper instead of red would be fine… The key is here you are making a vegetable soup base, and the taco seasoning is giving it the majority of its flavor.

Place all of the above ingredients in the order listed in the Vitamix. and secure the lid. Turn on then gradually increase speed to 10, then flip to high. Blend 5-6 minutes until you see steam escaping from the lid (yes, your soup will heat right in the Vitamix!). With the Vitamix on low, slowly add in the optional ingredients – corn, chicken, beans, jalepeno, through the lid plug opening. Blend for 10-20 seconds on low.

Pour into bowls and top with cheese, cilantro and broken up tortilla chips if desired.

No Vitamix?

I can’t say how this would turn out in another blender, and you may have to heat the soup in a pot on the stove, but certainly give it a try!
